10 Cheap, Quick, and Easy Family Meals

  1. Layer sketti
    • Ingredients:
      • 1 pound hamburger meat
      • I lb. spaghetti noodles
      • 1 jar spaghetti sauce
      • 1 lb. ricotta cheese
      • 1 1/2-2 cups grated parmesan
      • 1 1/2-2 cups mozzarella
    • Preheat oven to 375 degrees
    • Brown 1 lb. hamburger meat with a handful of dices onion. Add salt and paper.
    • Boil water and cook regular spaghetti noodles 5-7 minutes to al dente. Do not over cook.
    • Mix ricotta cheese with 1 cup of parmesan and 1 cup of mozzarella in large bowl.
    • Add cooked noodles and combine.
    • Drain meat and add spaghetti sauce.
    • Layer 3/4 of the noodle mixture into a large casserole dish. Press down firmly.
    • Top with half the sauce.
    • Crumble the remaining noodle mixture over sauce layer evenly.
    • Carefully pour over remaining sauce.
    • Top with left over cheese .
    • Bake until cheese is melted and top is golden brown.
  2. Taco soup
    • Ingredients:
      • 1 lb hamburger meat
      • 1/2 cup diced onion
      • 1 packet fiesta ranch seasoning
      • 1 packet taco seasoning
      • 1 can whole kernel corn
      • 1 can black beans
      • 1 can pinto beans
      • 1 can tomato sauce
      • 1 rotel
    • Heat 2 tbls oil in skillet, add onions, and cook until edges are brown.
    • Add Hamburger meat, salt and pepper, and brown.
    • In a strainer combine corn and both beans, drain, and rinse.
    • Move meat, corn, and beans into a large pot on medium heat.
    • Add taco seasoning, fiesta ranch, rotel and tomato sauce and stir.
    • Heat to low boil, then simmer 30 minutes.
    • Frozen or fresh ingredients, as opposed to canned, would be a tasty and healthy substitution!
  3. Meatloaf
    • Ingredients:
      • 1 1/2-2 lbs. hamburger meat
      • 2 eggs
      • 1/2 milk
      • 1/2 cup Italian bread crumbs
      • 1 pkg meatloaf seasoning
      • 1/4 cup + ketchup for topping (secret ingredient)
    • Preheat oven to 375 degrees.
    • Combine eggs, milk, bread crumbs, seasoning, and ketchup and mix well.
    • Crumble meat into mixture and mix until completely incorporated.
    • Line baking pan with tine foil then use paper towel to lightly oil the lining.
    • Pour mixture into pan and form loaf shape. Top with ketchup.
    • Bake 30 minutes to an hour, depending on the thickness of your “loaf”.
  4. Baked chicken and veggies
    • Ingredients
      • 1- 2 lbs. boneless, skinless chicken breast
      • 6 Potatoes (chopped)
      • 1 bag baby carrots
      • 2 sweet onions (quartered)
      • 2 bell pepper (cut into large pieces)
      • 1/4 cup veggie or olive oil
      • 1 pkg French onion soup mix
    • Add veggies, seasoning, and oil to large roasting pan (without rack)
    • Combine well
    • Season chicken breast to taste
    • Add to top of vegetable mixture
    • Cover pan with lid or tin foil
    • Cook for 1 hour or until chicken is cooked and veggies are tender
  5. Chicken poor man’s pie
    • Ingredients:
      • 1 lb. boneless, skinless chicken thighs
      • 2 cans veg-all
      • 1 family sized can of cream of chicken soup
      • 1 1/4 cups self rising flour
      • 1 1/4 cups dukes mayo
      • 1 1/4 cups milk
    • Season, boil, and cool chicken thighs
    • Dice chicken and add to the bottom of a large casserole dish
    • Drain and rinse veggies and add to top of chicken
    • lightly salt and pepper
    • Pour cream of chicken onto veggies and spread out evenly
    • In small bowl whisk milk, mayo, and flour
    • Pour on top of soup layer until all is covered
    • Bake 30-45 minutes or until topping is dark golden brown
  6. Sweet and sour chicken
    • Ingredients
      • 1lb. Boneless, skinless chicken breast
      • 2 pkg frozen mixed veggies of choice (I like birds eye Asian variety)
      • I large jar of sweet and sour sauce (red sauce in oriental food section)
      • Cooked white rice
    • Heat oil in large skillet and brown chicken
    • Add veggies and sauce  and cover
    • Cook for about 30 minutes stirring occasionally
    • If sauce needs thickening add 2 tsp of cornstarch and simmer
    • Serve over rice
  7. Baked chicken and rice
    • Ingredients:
      • 1 lb. boneless, skinless chicken breast
      • 1 cup uncooked rice
      • 1 1/2 cups water
      • 1 can cream of mushroom soup
      • 1/2 cup diced onion
    • Preheat oven to 375 degrees.
    • Mix rice, water, soup, and onions and add to small casserole dish
    • Add salt and pepper to top
    • Season chicken breast to taste and place them on top of the rice mixture.
    • Bake for one hour.
  8. Chicken Alfredo
    • Ingredients:
      • 1 lb. boneless, skinless chicken breast
      • 1 pkg frozen broccoli
      • 1 box of penne noodles
      • 1 sm. Carton of heavy whipping cream
      • 1 jar of regular parmesan cheese
      • Tony’s Cajun seasoning
    • Dice chicken and brown in sauté pan.
    • Add broccoli  and season with Tony’s. Cook until soft.
    • Meanwhile in large pot, boil noodles until tender.
    • In small sauce pan combine whipping cream and parmesan cheese.
    • Whisk occasionally until it boils then stir constantly until thick.
    • Remove noodles from heat and drain. Add back to large pot.
    • Add chicken and broccoli.
    • Top with cream sauce and combine.
  9. Teriyaki steak and broccoli stir-fry
    • Ingredients:
      • 1 lb of thin cut steak
      • 1 kg frozen broccoli
      • 1/2 lg. onion sliced
      • 1/2 cup soy sauce
      • 1/4 cup brown sugar
      • 1 tbls Siracha
      • 1 tbls+ corn starch and hot water to mix
      • Cooked brown or white rice
    • Cut steak into squares and brown in large skillet.
    • Add onion and broccoli. Cook until soft.
    • Add soy sauce, brown sugar, and sriracha and bring to a boil.
    • Add corn starch/water mixture and return to a boil for 5-10 minutes, until thick.
    • Serve over rice.
  10. Steak fajitas
    • Ingredients:
      • 1 lb. steak strips
      • 2 large bell peppers
      • 1 large onion
      • Fajita seasoning packet
      • Flour tortillas
      • Cooked rice and refried beans (optional)
      • Lettuce
      • Sour cream
      • Salsa
      • Guacamole (optional)
    • I large skillet sauté steak strips, bell pepper, and onion with fajita seasoning.
    • Steam tortillas in oven or microwave. (a few seconds in hot oven or mic will do)
    • Build your fajitas with whatever you like
